This savory paste is made by stir-frying garlic and shallots until crispy, blending them with sun-dried chilies and seasoned pork lard, all crafted with a secret Phrae-style recipe. The result? The name Nam Yoi comes from the local term for freshly made rice noodles in Northern dialect—Khanom Jeen Nam Yoi. These noodles are traditionally made by pressing rice flour through a mold into boiling water. Once cooked, they're rinsed in cool water and squeezed to remove excess moisture, resembling "dripping water"—hence the term Nam Yoi (literally “dripping water”).
Over time, Nam Prik Nam Yoi has evolved into a dry-style chili paste, making it easier to enjoy, store, and share—while still preserving its deep-rooted Lanna flavors.
